Premium Sturgeon can grow to be 500 kilos in size and take 8-10 years to mature before they can harvest Caviar. The maturation of these Grand Sturgeons are strictly monitored by Veterinarians, live in fresh water environments that are temperature and water quality controlled, and are fed a strict high quality diet. You can imagine that the size of the investment in this type of operation is significant.
